BOLANI (AFGHAN CUISINE)
Bolani is a flatbread stuffed with a vegetable such as lentils, pumpkin, spinach, chives, potatoes or leeks. It has a thin crust and It can be served with plain yoghurt, yoghurt sauce or chatnay sauce. Bolani is one of the famous street food and side dish in Afghanistan.
Chive Bolani (Bolani Gandana)
Ingredients
JDough
- 3½ cups of flour
- 1 cup of water
- 1 teaspoon salt
- 1 tablespoon of olive oil
JFilling
- 1 or 2 pounds of chive
- fresh green chilli diced/ jalapeno chilli
- chopped tomatoes (optional)
- 1 teaspoon olive oil
- salt
JFrying
- Frying pan
- ¾ olive oil or vegetable oil
Instructions
- In a large bowl mix the salt, olive oil and water then add the flour, knead the dough until the dough is smooth and soft not sticky. Cover the dough for 25-30 minutes.
- Wash the chives then chop into small pieces, add the chopped jalapeno chilli, add black pepper, salt and oil. Combine them well.
- After 25-30 minutes, make a small ball from the dough and roll each piece into a thin round circle.
- Take a little amount of chive filling and place it on half side of the rolled out dough, fold it and press the edges together to seal.
- Place the bolani to a frying pan, fry until golden brown and repeat with the remain bolani.
- Serve it hot with yoghurt or chatni sauce.
